Hello, my starter seems really stiff, but it rises after about 6-8 hours. I've kept it dormant in the fridge and feed it about every two weeks. Again, it always rises. I want to make a loaf of bread for my friendsgiving. I took the starter out of the fridge two days ago and gave it two feedings. I also did two float tests... The stater sank to the bottom each time.
I just fed it again (it was fed 10 hours ago) I typically feed my starter with a 1/3 dark rye, 2/3 king Arthur white flour. The ratio I use is 20g starter, 100 gram each of four mixture and water.
Oh, and I've used this starter successfully in the past to make gorgeous loaves. I've been maintaining the starter for 3 months now.
