Hi Joan, it sounds like your starter is definitely heading in the right direction, but the yeast may not have fully activated. Is it rising at all? Sometimes the bubbles are mostly beneath the surface, but rising is a good indication that the yeast has kicked in and is doing its job. In the course of about 12 hours you should be able to see the starter slowly rise, reach a peak, and then slowly begin to fall back down to its original height. Often you'll see lots of tiny bubbles on the surface after the starter has fallen completely. If you're not seeing any of this type of activity, give our Baker's Hotline a call at 855-371-2253.
