Hi Aaron, the total maintenance amount of starter you'll have is actually 339g, since you'll be mixing together 113g each of starter, flour and water for each feeding. That still won't be enough for your recipe, however. In a situation like this you'll need to build the quantity of your starter during the last feeding before you plan to bake. When you have a scale you can calculate exactly how much you'll need for your recipe, plus enough leftover to feed and perpetuate. In this case you need 300g starter for your recipe plus 113g leftover. That makes a total of 413g. We'll round that up just a bit, since you always lose some stuck to the sides of your container, so let's aim for 420g. You can easily build the quantity of your starter to that level by saving 140g of starter (instead of the usual 113g) and feeding it 140g of flour and 140g of water. Once this rises to its highest point you'll have enough ripe starter to add to your recipe, plus enough left to feed and perpetuate.
