Hi Avery, please let me know how the 1:1:1 ratio works for you. Since I thought you were going with Martin's recipe and the 2:1:1 ratio, I doubt your starter was rising too rapidly, as I hypothesized in my earlier message. I still think the 1:1:1 ratio might work better for you, but give your starter a few days to adjust to the new feeding routine and let me know what happens. If it seems sluggish on the counter, there's no harm in trying the warmer room. Barb
