Hi Laurie, usually patience pays off with a sourdough starter and you'll eventually notice more rise if you continue with your current feeding regimen. That being said, if you have your starter stored in a container that is wider than it is tall, it's possible that your starter is rising more than you think. It can be harder to see the starter doubling in size if it's stored in a wide bowl. If this isn't the case, then you could try a slightly different feeding routine for a few days and see if this results in a better rise. Try switching to whole wheat flour, feed only once a day, and switch the feeding ratio to 4 ounces starter: 2 ounces flour : 2 ounces water. Once the starter is rising and falling predictably, you can switch back to the twice a day feedings with our unbleached all-purpose flour with the 4:4:4 ratio. Once the starter is again rising and falling predictably, you're good to go!
