Hi Jared, if you're feeding your starter equal parts flour and water by weight then it's considered a "liquid" starter with 100% hydration. I'm not sure what not discarding will do to the consistency of the starter, but I would guess it will still have a consistency similar to pancake batter when it's ripe, and probably a little thicker right after you feed it.
