Hello, My starter is about 4 years old and I keep it in the refrigerator and feed it about once a week and when using I take it out and feed it daily. I accidentally left it on the counter for a few days (2-3) without feeding it at about 65-70 degrees F and it appeared to have some mold growing on the surface when I noticed it. I skimmed the top as carefully as possible to get rid of the mold and discarded more than half of the starter and began daily feeding for about a week now. It seems OK but does not have the same fresh yeasty smell as before. It is bubbling daily but I am unsure of smell. My question is how can I tell if still good or if it has been contaminated by the mold? If I can make bread with it, does that mean it is still good? Is there some other test to reassure that it is good? I guess I am not trusting my nose. I prefer to keep this starter and not start over if at all possible.
