I started making my own starter just over a week ago and so far it is looking good! I have found that weighing my flour made a huge difference in the texture of my starter. In the beginning I just measured it and found that my starter was very thick and stiff. Since I am weighing the flour my starter has a consistency of a thick pancake batter and is much easier to work with. Your troubleshooting tips were very helpful! You are spot on that an expensive scale isn't necessary, mine cost a whole dollar at a flea market and I have never even replaced the battery after quite a few years of use!
