Gruyère-Stuffed Crusty Loaves Bakealong

I tried the loaves. Everything went well until the baking. The roll opened up and slumped in the second rise, and the cheese all melted out during the bake. There was no cheese in the spiral, just a void. Is there a way I can keep this expensive cheese from escaping?
