Hi Mary! You sure can use your sourdough starter in this recipe. You'll want to use an equal weight of fed sourdough starter to replace the overnight starter created here. You'll need 9 1/4 ounces of fed sourdough starter for this recipe. Happy baking! Morgan@KAF
