Hi Susan, hopefully, we can clear things up. As PJ mentioned, when you slice the log into 4 mini loaves, each loaf is 4" to 5" in diameter and around 3" to 4" high. When making 2 larger loaves instead of the 4 minis, each one winds up being around 8" in diameter, and about 3" high. After you've sliced the log in half to create your two loaves, stand them up so you can see the cheese on the inside. In log form (before you stand it up) each half appears like it will be around 6" tall. When you stand it up, the weight of the dough and cheese does cause it to collapse a little bit down to that 3" height. Thankfully, we didn't have any loaves that crumbled or fell into themselves and don't expect that to happen to you either! It won't stand up perfectly straight, but it holds its shape very well. Some cheese will try to escape out of the bottom so you can just sprinkle any loose cheese on top. Any cheese on the bottom will just create a delicious, crispy cheesy crust.
