Are you hoping to make the loaves a little softer next time? If so, you can try brushing the exposed parts of the dough with melted butter before and after baking. (Skip the spritzing with water, as that will create steam and crisp up the crust.) Also, you can cut back on the baking time just slightly, and use all-purpose flour instead of bread flour. Kye@KAF
