For those who would like to use gruyere cheese but balk at its cost - try Jarlsberg. Taste is quite similar to me, and I've found it to be a lot cheaper. I use it whenever a recipe calls for gruyere (I bought actual gruyere once, and decided I liked jarlsberg better anyway). (I made this today, whole wheat version. Very very very yummy - I wolfed down one, and am freezing the other three. Next time I'm going to make more smaller mini loaves as others have suggested.)
