Hi Cindy, while we call the mini loaves "mini," they can definitely serve more than one person. We think your initial thought to bake eight of these smaller loaves and position them around the table will make a fantastic presentation. Alternately, you could make four half-sized loaves to pass around the table in a tear-and-share fashion. If you'd like to bake them ahead, consider mixing up the starter on Thursday night and baking them on Friday. When you're ready to serve, wrap them in foil and put them in a 350°F oven for about 20-25 minutes, until warm through. Everyone is going to love them.
