What a great clear post, Kye! I love seeing the substitutions for each common dairy ingredient. Using coconut milk in the Japanese Milk Bread Rolls sounds divine. For those rolls do you use coconut milk to replace the dry milk as well as the whole milk? I know it is only 2 Tbs, but thought I'd ask. Does the extra liquid require extra flour?
