Hi Thu! That's an interesting idea and something you could experiment with, it's often supplemented along with yeast or that portion of dough is added to sourdough starter, but you can experiment otherwise and make dough the next day using a portion of yesterday's dough in it, feeding it with some flour and water to make it like a mini levain.
