You cover the instance where you over proof. My problem is after I mixed my dough and let it rise, I became distracted (facebook will do that to you) and forgot about my dough until two hours had passed. Should I be concerned that I overdid the first rise? I just put my loaves in the pans to proof and I am hoping for the best. I am using the SAF-Instant yeast that is sold on King Arthur.
