It's true while the dough is rising (and over-rising), the yeast is changing the flavor. The longer it rises, the more fermented or "yeasty" the dough will taste. There's no remove this flavor from the bread other than hiding it beneath other strong flavors. You can try brushing the baked loaf with honey butter or serving the slices with another flavorful compound butter (herbs and spice, or cranberry jam are nice additions). If you know you dislike this taste, be sure to watch your dough closely to prevent over-proofing. Good luck! Kye@KAF
