I used to have that problem when I used the full cycle on my bread machine. The loaves would often fall as they baked. I found out that the Saf-instant yeast was so good that my dough proofed in less time, hence way too poofy. I now just use the dough cycle and hand shape the dough after. Works like a charm every time.
