I have been using a cold Dutch Oven. Setting the oven temp immediately the covered pot goes in the oven. Setting timer for 30 minutes, then removing the lid at 30 minute mark turning the pot 180° and continue baking for 30-35 minutes. Comes out perfectly every time. I leave the loaf in the pan for 5 mins before turning out on to the rack. This softens the bottom cosier ably and much easier to slice.
