I use natural applesauce in all my cake baking and some other in place of oil. Have you tested this? My cakes and brownies are more moist, less crumby and seem to rise better. Also you mentioned turning onto cooling racks. Do you flip them so tops are up? And how do you figure for the rack marks, if you don’t flip?
