Hi John! Because the motion of the pizza wheel spinning is vertical, it doesn't prevent a clean cut. Whereas twisting with a glass is a horizontal motion that is more likely to tear the dough and leave an unclean cut. We hope this helps and happy baking! Morgan@KAF
