You're welcome to give it a go, Dorothy! We think apricot especially would be utterly divine. It could create some extra steam, so make sure you have those slits cut in the top crust to allow it to escape. Alternatively, you could heat some apricot jam on the stove until it's fairly liquidy, and brush it on the crust just as it comes out of the oven for a light apricot flavor and a gorgeous shine.
