Hi Darell, many challah recipes include oil rather than butter because this bread is often served in Jewish homes where those who keep Kosher can't serve foods that contain dairy with meat dishes at the same meal. In addition, because oil is 100% fat and butter is generally only 80% fat, you'll get a little more moistness and tenderness from oil as compared to an equal amount of butter.
