Hi Lance. When it comes to these measurements, 17 ounces (or 482 grams) is going to be the weight of the flour if you are using a scale to measure your ingredients. If you are using measuring cups to scoop your flour instead, you will be measuring out 4 cups. We use 4 1/4 ounces for each cup of flour, so 4 cups will weigh 17 ounces. It boils down to weight vs. volume here. So the first step will be to either weigh out your 17 ounces of flour with a scale OR measure out the 4 cups of flour with your scoop. Hope this helps!
