Thomas, you could... but challah isn't really a bread that takes well to sourdough, since it's got its own mild sweetness that tends to fight with sourdough's tang. I'd suggest you get your starter going and try some of the basic recipes that came with it. When you become an accomplished sourdough baker, you can try working some starter into this challah recipe — just enough, and using the optimal amounts of fermentation, to enrich the bread's flavor without making it sour.
