Steph, you could try it with 1/4 cup of yogurt, if you liked! We actually tried this recipe with six different egg replacers: three different brands of commercial egg replacer, applesauce, extra banana, and flax egg. Applesauce turned out to be one of our favorites! It lends such a nice flavor.
