Hi, Barbara. This recipe is sized for a 9" x 5" loaf pan, which accommodates 6 cups of batter. Not knowing the dimensions of the mini loaf pan you're considering, a good rule of thumb is to fill the pan about 2/3 full to allow it room to rise without overflowing. You could get two or possibly three mini loaves from this recipe, and good news, the bread will freeze very well. Susan
