Adding sourdough discard to recipes works best in cases when there is both flour and water called for; typically we recommend adding 1 cup (8 ounces) of starter and reducing the flour by 1 scant cup (4 ounces) and the water by 1/2 cup (4 ounces). Since there's no liquid added to the banana bread, this isn't a good recipe contestant for receiving discard. Instead, consider using a recipe like this one for Sourdough Pumpkin Spice Bread and replace some of the pumpkin purée in the recipe with mashed bananas. It'll be delicious! Kye@KAF
