I have tried many banana bread recipes over the years, and had not found a 'favorite' - until now! I love how reliable and versatile this one is. I especially appreciate weight measurements as I prefer to scale my ingredients. I tried the Cook's Illustrated method of microwaving bananas to extract liquid, then gets cooked down, and found it does not yield a markedly better loaf for my taste buds. The ease of the KAF recipe in terms of speed, ingredient options, clean up, and success rate make this one a keeper for me.
