I can't say enough good things about this bread recipe. I have been baking for 50 years and this is the best banana bread I have found. So many recipes are fussy this one is not. You just dump it all together using what you have on hand and it works. I didn't have enough bananas for one batch so I added in applesauce to make 2 cups. No one knew the difference. I made gift boxes of baked goods for Christmas and everyone loved this bread. I baked it in muffin tins, mini loaf, and full size loaf pans, then I froze it til I was ready to pack up my boxes. Anytime I can get whole grains, fruit and less sugar into my family and they ask for more I count it as a great accomplishment.
