Hi Valerie, you can let this fruit cake rest at room temperature for a week or longer. We have one aging right now in the test kitchen that's going on two weeks. We tasted it after 9 days and thought it was just a tad dry, so if you want to age it for longer, you might consider giving your cake another round of glaze before letting it sit for a few more days.
