If you're asking about making the star breads in advance and freezing them, you can take this step if you fully bake the bread, let it cool, and then wrap well and freeze. Some fillings may keep better than others (those with moisture may become soggy upon thawing). The cinnamon-sugar filling freezes beautifully and can be reheated before serving.
