Loved the great read. But sorry you messed up on the “classic key lime pie”. As a 6th generation Conch (Name for native Key Westers) I can assure you we use only a real pastry pie crust never ! graham (Good Lord!) and the pie is always topped with a beautifully tanned meringue.
