A great cookie recipe is short bread made with rice flour. I have done this for years for those allergic to wheat. And to dress it up melt some chocolate and dip part of the cookie. Just find out what flavor chocolate is his favorite and add a little paraffin wax to the melting chocolate to make it firmer and less apt to melt all over his fingers. At Christmas I would make double batches for a friend whose daughter in law had gluten issues and made her extra. Also did this for bake sales, since gluten is becoming such an issue.
