I have my mother’s recipe for potato rolls. She used boiled mashed potatoes and the water used to cook the potatoes in her recipe. Any advice on substitutions? I love making her roll recipe, but I would prefer to sub instant potato flakes or potato flour to ease preparation when cooking a big meal.
Here is the ingredient list. Southern cooking, so more sugar than you might expect!
1 Cup Mashed potatoes
2/3 Cup Shortening (Crisco)
1/3 - 1/2 Cup Sugar
2 Tsp Salt
2 Eggs
14 Grams Active dry yeast1 1/2 - 2 pkgs
1/2 Cup Lukewarm potato water
1 Cup MilkScalded
6 Cups All-purpose flour, stir before measuring (6 c = 720 g)
