Hi Emmanuel! The amount of potato flour necessary is not a fixed amount but one that can be experimented with. I generally like it used at about 5% of the flour used in the recipe. Using that guideline, I would recommend using about 2.7kg or potato flour for your 50kg of bread flour. Feel free to adjust it up to 10% from there. Happy baking!
