Update: it works great! I made the KA Parker House Rolls and they were phenomenal! I put 50g of potato chips in a food processor for about 30 seconds; it was a bit oily (expected) and mealy as it didn’t blend down like flour. But I added them to the mixer bowl and threw in a small handful of potato starch at the last minute. I didn’t even brush in additional butter between the layers and the rolls were super moist, tender, and full of flavor.
