Hi Ilaria, I wouldn't recommend that as you would lose a lot of moisture unless you don't mind doing a lot of tweaking as you go by adding flour and/or water as you mix and knead. I'd recommend only doing this if you've made the recipe you're making before, and know what the texture of the dough should be like so you can adjust the dough with water/flour as needed to get it to be the right consistency.
