Hi there, Deborah! We haven't found that to be an issue with blind baking pie crust. Most often when a crust becomes dry and the fat leaks out, it's because the dough needed to be chilled a bit longer before baking. Also when you blind bake a crust, you'll just bake the crust until it's a light golden brown color. We hope this helps to clarify!
