Hi Karen! For a double-crusted pie, we'd recommend utilizing the other tips here, using a metal pan, baking the pie lower in the oven, and baking the pie thoroughly. Blind baking when you've got a top crust can be tricky, you can try blind baking the bottom crust so that the dough has just started to get a bit of color but is still soft so you're able to attach your top crust.
