Alayne, thanks for your question! The answer depends on when you think you'll be serving the pie. If you're serving and eating it right away, you can go ahead and put the meringue on the pudding while it's still hot. If you're going to be waiting for a while before serving, though, you'll want to add the meringue at the last minute.
