Question on browning a bottom crust. Could you put your pie shell in a glass pan, then put that pan, crust and all, inside a larger metal pan, and cook it on a baking stone? Then you could lift out the glass pan as it cooks to check its browning, without risking the thermal shock of putting the glass pan on the hot stone. TIA
