Actually, no, Susie, because putting the crust into a hot pan is going to melt the butter and let it run out of suspension while you're putting the filling and top on the pie. Blind baking the bottom crust unfilled for 6 or 7 minutes is a more surefire method; you can take it out and fill it, then put it back in the oven. Susan
