This should work functionally, Ann, since honey is also an invert sugar and the two sweeteners have a similar water content. Honey is a little sweeter, so you may want to think about using a little less. The flavor of the honey will also come through quite strongly, so you'd have to be excited about the combo of honey and chocolate. If you decide to give it a try, let us know what you think.
