Hi Rei, this isn't something we've tried, but we're pretty strong believers in the unique qualities of the pudding mix in this recipe. We've tried substituting cornstarch, sugar, and extra vanilla for the pudding mix, and the results just weren't the same. You can choose to omit the pudding mix, but your cake will be a bit less sweet, and somewhat drier.
