Hi Janet, sugar provides more than just sweetness to a cake, and reducing the sugar by that much would likely result in a cake that was very dry and didn't rise properly. That being said, you could certainly reduce the sugar somewhat. Check out this blog post about how to reduce sugar in cakes to find out the best way to do this.
