Hi Morgan! We have found that when you use the full amount of syrup in this recipe, it will make a delicious cake that is incredibly moist.  Adding extra syrup may make the cake too soft or too wet, which would change the structure/texture (there is only so much a liquid a cake can absorb). With that being said, if you want to increase the flavor of the rum, adding an additional 2 to 3 Tablespoons to the syrup before soaking would be just fine.
