I have made this cake for a number of years, but I’ve played around with different flavors of Rum. You can use any flavor rum and change your pudding mix to the same flavor as the Rum and it makes the most wonderful cake. I’ve found that my families favorite is Banana Rum Cake. I just use banana pudding and banana rum, and if I have a couple of over ripe bananas I put them in. I have also used a few chopped walnuts in the mix and in the bottom of the pan. If you put them in the pan they are on the top of the cake when you turn it out and it looks so festive, plus it tastes great.
I do the same thing with coconut, and also pineapple. They are all WONDERFUL!!
