Hi there, Mary Ann! We haven't tried using a packaged topping mix in place of the pudding mix called for in this recipe, so you'll have to do a bit of experimenting. We haven't found a substitute for the pudding mix thus far that yielded similar results. We wouldn't suggest using cake flour in this recipe because the cake is a bit heavier side, cake flour won't provide enough structure and the cake will most likely collapse. Kindly, Morgan@KAF
